Weight Watchers: Bubble Up Taco Casserole


Most of the time when I make a Weight Watchers meal, I lie to Chris since I know he has pre-conceived notions. He says, "I'm not on a diet" or something else like, "I don't want tasteless diet food." But, the recipes are delicious, healthy, and I feel as if they hold me accountable with all the nutirtion information readily available!!

With this recipe, Chris asked if it was Weight Watchers, and I told him yes before he tasted it. Going into dinner, I think he really wanted to dislike it and complain... but, it was a hit. Did I mention he ate the leftovers for another couple meals?

Ingredients

  • 1 lb cooked extra lean ground beef (I used ground turkey.)

  • 1 7.5oz package pillsbury biscuits

  • Taco seasoning (I buy a store bought 30g pack)

  • 1⅓ cup salsa (I used the 'fancy' grocert store salsa in which they chop up chunkier vegetables. It was a nice addition! I feel as if alot of the salsas have a high salt content.)

  • 2 cup diced peppers, I used red, orange and yellow

  • 1 cup diced onion, I used red onion

  • 1 cup light shredded cheese, I used a Mexican blend

  • Green onion

  • Fat free sour cream for topping, optional

Instructions

  1. Cook your ground beef in a pan on the stove, add your taco seasoning and simmer for a few minutes.

  2. Preheat oven to 350F, spray a 9x13 casserole dish and set aside.

  3. Mix your ground beef and salsa together in a bowl.

  4. Cut up peppers & onion, and cut your biscuits into 6 pieces each.

  5. Place half of your biscuit pieces in the bottom of your casserole dish, top with half of your meat mixture, half of your peppers and onions and half of your cheese. Repeat layers and finish with your chopped green onion on top.

  6. Loosely cover with foil and bake in oven for 35 minutes, remove foil and continue baking for 15 minutes.Let cool for 5 minutes then cut into 6 servings. 7sp or 6pp per serving. Top with a spoon of fat free sour cream (optional)

Chris' rating: 5/5. Hopefully, this will prove to him that healthy does not equal food that tastes like cardboard!
