Basil Vinaigrette

Last night I earned my first 5/5! I certainly did not think that I would be rated so high on a salad dressing, but it was pretty much the star of the meal! Over Christmas I bought several more cookbooks so this recipe is courtesy of Everyday Detox, 100 Recipes to Remove Toxins, Promote Gut Health, and Lose Weight Naturally by Megan Gilmore. This dressing is healthier and more flavorful than any bottled dressing and will stay in the fridge for up to a week.
Ingredients:
3 tbsp raw apple cider vinegar
1/4 cup fresh basil leaves (feel free to swap this for another herb such as dill or cilantro)
6 tbsp extra-virgin olive oil
2 tbsp water
2 tsp dijon mustard
2 cloves of minced garlic
2 tbsp raw honey
Directions:
Combine all ingredients in a blender until completely smooth.
Store in an air-tight container in the fridge for at least an hour before use to allow the flavors to develop.
