Weight Watchers Crockpot Meatloaf

First of all, I have to say this is not as good as momma's meatloaf, but it was another Weight Watcher's success! The following should provide you with approximately 8 slices.

Ingredients:

  • 1 lb lean ground beef

  • 1 lb lean ground turkey

  • 2 cups soft breadcrumbs (I used panko gluten-free breadcrumbs)

  • 1/2 cup marinara sauce

  • 1 egg

  • 2 tbsp dried onion

  • 1 1/4 tsp salt

  • 1 tsp garlic salt

  • 1/2 tsp dried Italian seasoning

  • 1/4 tsp garlic powder

  • 1/4 tsp pepper

  • 2 tbsp marinara sauce

​Directions:

  1. Place aluminum foil in your crockpot from end to end. Foil should be hanging over the edge of the crockpot. (Ensure it is long enough to be able to lift the meatloaf out by when done).

  2. In a large bowl, mix the ground beef, ground turkey, bread crumbs, 1/2 cup of marinara sauce, egg, onion, salt, garlic salt, Italian herbs, garlic powder, and pepper until well blended. (I recommend getting in there with your hands and getting dirty!)

  3. Shape into a loaf and place in the crockpot on top of the aluminum foil.

  4. Spread the 2 tbsp of marinara on top.

  5. Cook on low 5-6 hours or on high for for 2.5-3 hours.

  6. Lift out the loaf by the aluminum foil and cut.

Chris' rating: 3.5/5. When I compare it to momma's I agree.

Now I'm in the mood for mom's meatloaf....
