Weight Watchers Slow Cooker French Onion Soup
This recipe came from Weight Watchers and is a delicious soup for a cold day. I cut the recipe in half since it is just Chris and I... and then I had leftovers for lunch the next day!

Ingredients for 3 servings:
1.5 lb of uncooked onions (about 3)
2 tbsp unsalted butter
1 tsp salt
1/8 cup of fino sherry
1 tsp of minced garlic
1 1/5c reduced-sodium chicken broth
1 1/5c reduced-sodium beef broth
3 sprigs of fresh thyme (plus extra for garnish)
1 bay leaf
1 tsp sugar
1 tsp reduced sodium soy sauce
black pepper
1 1/2 tbsp Parmesan
Directions:
Combine onions, butter, and salt in the slow cooker. Cook on high until the onions are browned (8-10 hours).
Add sherry and garlic. Stir and cook uncovered on high for 10-15 minutes to burn off the alcohol.
Stir in the broths, thyme, bay leaf, and sugar. Cover and cook an additional 2-3 hours.
Remove thyme and bay leaf. Stir in soy sauce and pepper.
Sprinkle with cheese adn garnish with thyme.
Chris and I added bread and some greens to the side to make this a complete meal. Enjoy!
